Ingredients:

Romaine lettuce
Mixed greens (if you have them)
Chicken roasted or grilled 3 oz. = 31 calories, 6g of protein per ounce
Shredded cheddar cheese – 1/4 cup = 110 calories, 7g of protein
Diced tomato
Red onion
Green onion
Black olives 10 = 42 calories
Cilantro
Toasted Pecans* (glazed pecans make it even better!)

Balsamic Vinaigrette Dressing

Just toss all the ingredients with the dressing & enjoy!

*To toast your pecans just heat a small or medium skillet to a medium heat & stir the pecans for a minute or two.

To glaze your pecans boil some water in a sauce pan, dip your pecans in & out of the hot water quickly & pour them into a small bowl with a few tablespoons of sugar.

The pecans won’t use all the sugar, but you need enough in the bowl to coat them.

Place pecans on a greased cookie sheet & bake for 4 to 8 min. in a 350 degree oven.

Be careful not to burn them.

You can store these yummy morsels in an air tight container in the fridge to use in all kinds of recipes, or as a snack.
