Tequila Lime Chicken Breast
What You Need:
1/2 cup gold tequila, or your favorite
1 cup fresh squeezed lime juice (5 to 6 medium limes)
1/2 cup freshly squeezed orange juice (2 regular sized oranges)
1 tablespoon chili powder
1 jalapeno pepper minced
1 tablespoon minced garlic
2 teaspoons salt
1 teaspoon freshly ground black pepper
3 whole (6 split) boneless chicken breasts, with skin on to retain moisture while grilling.
How it’s done:
Combine the tequila, lime & orange juice, chili powder, jalapeno pepper, garlic, salt, & pepper in a large bowl. Add the chicken breasts, cover & refrigerate several hours or overnight.
When you’re ready to grill, brush the breasts with oil to prevent the chicken from sticking & to keep it moist. Sprinkle with salt and pepper to taste, and grill them skin-side down for about 5 minutes, or until nicely browned. Turn the chicken & cook for another 10 minutes, or until just cooked through. Don’t over cook the chicken. It will continue to cook a bit once your remove it from the grill.
Remove to a plate & cover tightly letting it rest for 5 minutes. Serve hot or at room temperature.
