Super Fast “Lite” Cod (In Beer)

That’s right, no skimpy portions here!  Poaching the cod in beer infuses moisture & a buttery taste without the calories & fat!

You only need 6 ingredients:

Raw Cod Fillet

Fresh Spinach

Beer (of your choice)

Hard Boiled Egg

Marzetti Salad Dressing (“Gourmet” restaurants use this same dressing on their greens. It’s yummy.)

Lemon juice

Fix as much as you’d like for yourself, or the family. Below you’ll see how a plate breaks down.

Your cod will cook in a few minutes so be sure to have your spinach washed & hard boiled egg cooked & cooled.

You will put your salad together with the spinach torn into pieces and the diced hard boiled egg while your fish is cooking.

This goes super fast – so be ready with your salad!

Prepare the cod:

codSimply take out a pan large enough to accommodate the amount of fish you’re preparing. Cutting a large fillet up will decrease cooking time & your portions will be ready to serve. You will put thin portions of the fillet in the pan after allowing the thick pieces to cook a bit.

Pour beer in your pan 1/2 up your thickest portion of the cod fillet. Remove your fillet & bring beer to a simmer (little bubbles come up from the bottom).

Add your thickest fillet portions first, let that poach a bit, then add your thinner pieces.

You will know your fish is cooked when it becomes flaky.

Remove the fillets from the pan & squirt lemon juice over it.

Then season with your choice of:

Garlic salt

Ground Pepper

Tony Chachere’s

Season Salt

Old Bay Seasoning

Beau Monde Seasoning

Louisiana Cajun Seasoning

Plate your fish, toss a tablespoon of Marzetti Salad Dressing with your spinach & eggs. Only add a little at a time because a small amount of this dressing goes a looong way.

One Serving:

6 Oz. of Cod, 2 – 3 cups of Spinach & 1 Egg (add 80 calories, 3g carbs, 7g fat for each tablespoon of dressing)
