Refreshing Fresh Strawberry Pie or Parfaits

July 4 This lite &  refreshing fresh strawberry pie is simple, and oh  sooo delicious!

Make 1 pie for every 4 to 5 people because it disappears FAST!

Ingredients

1/2 c. sugar or sugar substitute (more if berries are not very sweet)
4 tbsp. cornstarch
2 c. water
4 tbsp. strawberry gelatin
2 pts. fresh strawberries
1 (8 inch) baked pie crust (regular or graham crackers) or

Parfaits: Make parfaits by filling glasses with filling instead of using a pie crust

 

Directions

Wash & de-stem your strawberries, dry them & if they are already refrigerated – but them back in the fridge.

Mix sugar, cornstarch, and water in saucepan. Stirring constantly, cook until the mixture is almost clear & thickened. Remove from heat. Stir in gelatin. Allow to cool & stick in the fridge for 10 to 20 min.

Pour cooled mixture over your strawberries & gently coat them (you may cut them up if you’d like before coating them).

Pour into pie crust or parfait glasses and chill for 2 1/2 to 3 hours. Serve as is or with whipped cream.

Sprinkle blueberries, or blue sugar crystals on top for the 4th of July.

This pie needs to stay refrigerated, don’t leave set out for too long.

It will not keep days – so make it the night before or day of.
